RECIPE EXPERIMENTS: Grilled Pineapple Salsa

KQ host Mitch Hightower has been experimenting with Pineapple Salsa recipes. This version had him grilling the pineapple and the jalapeno peppers. Also included in the recipe: onion, cumin, salt, pepper and lime juice. The salsa is currently chilling in the refrigerator so the flavors can meld. We'll report back with a taste test soon.

Bang Bang Pizza

Chef Philip used Bang Bang Sauce instead of tomato sauce or marinara for a boldly flavored pizza. Other toppings included both mozzarella and pepper jack cheeses, red onions, roasted chicken, very crispy bacon lardon, yellow chili peppers and orange bell pepper.

Mitch reports, "The flavor profile was very bold and we loved it".

NEW VIDEO: Rainbow Martini

KQ host Mitch Hightower shows you how to make his recipe for a Rainbow Martini, complete with a six-color sugar rim. This shimmery pink cocktail mix is a riff on a classic "top shelf" gin martini with a hint of orange. Luster dust is the secret ingredient for creating the shimmer effect. This stirred, not shaken, cocktail is double strained as well to avoid ice chips in the finished drink. Chef Philip serves as the guest taste tester for KQ Season 4, Episode 9, (S4E9N69-HD).

NEW VIDEO: Jalapeno Margarita

Kitchen Queers host Mitch Hightower gets busy in this episode as he demonstrates all of the steps needed to create the Jalapeno Margarita, including how to make colorful kosher salt. Mixed with sanding sugar, Mitch then shows how to fashion a sparkly salt-sugar rim on the serving glass. Next, Mitch creates an unusual cocktail garnish using a jalapeno pepper segment and a maraschino cherry. The technique of muddling is utilized to infuse the cocktail with plenty of fresh jalapeno flavor, and a double-straining technique is demonstrated which prevents jalapeno seeds from winding up in the finished beverage. KQ partner Chef Philip appears as the guest taste tester for KQ Season 4, Episode 6, Number 66.
