RECIPE EXPERIMENT: Gluten Free, Low Carb Bacon Cheese Mini Muffins

If the idea of "gluten free" and/or "low carb" pastry makes you think of hockey pucks, this recipe just might be for you.  Made with a variation of popular and easy-to-make "Fat Head Dough", KQ host Mitch Hightower loaded up these mini muffins with bacon and cheese.  Mitch and partner Philip highly recommend these muffins and they'll be demonstrating how they do it in an upcoming Kitchen Queers video.

RECIPE EXPERIMENT: Gluten Free, Low Carb, Bacon Cheese Rolls Made With Fat Head Dough

RECIPE EXPERIMENT: Gluten Free, Low Carb, Bacon Cheese Rolls

You may expect anything gluten free to taste like a hockey puck.  The good news is, using a recipe for "Fat Head Dough" will prevent that from happening.

KQ host Mitch Hightower and partner chef Philip Buchan have been experimenting with Fat Head Dough.  They have discovered that this gluten free, low carbohydrate dough can be used in a variety of different sweet and savory baking recipes.  And no wheat flour is required!

More ideas for baking with this dough will be available in new KQ Season 5 episodes coming in 2019!

RECIPE EXPERIMENTS: Pulled Pork Enchiladas

Chef Philip makes an awesome dry-rubbed pulled pork, and he used some of the meat to create an enchilada dish that wowed us all. Corn tortillas were filled with the pulled pork as well as diced onions and a generous amount of cheese. Next the enchiladas were slathered in a homemade sauce made just for this recipe, and topped with more grated cheese. The kitchen smelled amazing while these baked. And they were gone mighty fast, so hopefully Chef Philip will make a double batch next time. So yes, this #RecipeExperiment was a huge success.

The KQ Crew has been busy taping another Kitchen Queers episode. Coming next week, KQ host Mitch Hightower shows you how to make his recipe for Bacon Jalapeno Bean Dip. This very yummy and easy-to-make dip is great for dipping chips, crackers, as well as fresh veggies. It's also awesome as a topping for a tostada or as a filling for tacos.

Bang Bang Pizza

Bang Bang Pizza

Chef Philip used Bang Bang Sauce instead of tomato sauce or marinara for a boldly flavored pizza. Other toppings included both mozzarella and pepper jack cheeses, red onions, roasted chicken, very crispy bacon lardon, yellow chili peppers and orange bell pepper.

Mitch reports, "The flavor profile was very bold and we loved it".

Kitchen Queers host Mitch Hightower shows how to make a very tasty Bacon Cheese Pull Apart using prepared biscuit dough, crispy bacon, onion, egg, seasonings and grated cheese. This easy-to-prepare savory baked dish is great for a party, brunch buffet or Sunday breakfast. The Bacon Cheese Pull Apart can be served sliced if desired and for more casual occasions is excellent shared finger food as a "pull apart".

RECIPE EXPERIMENTS: Cheesy Bacon Jalapeno Cornbread

Kitchen Queers host Mitch Hightower has been experimenting with cornbread recipes, and this version seems to have pleased everyone in the KQ test kitchen.

Filled with crispy bacon, jalapeno peppers, diced onion and grated cheese, this cornbread holds its shape well and is very moist thanks to the addition of corn oil.

This very easy to make appetizer is a great party treat or TV night snack.  With only six ingredients, (if you include sour cream topping); and a bake time of 20 minutes, it won't be too long before these are ready to serve.
