RECIPE EXPERIMENTS: Three Bean Vegetarian Chili

RECIPE EXPERIMENTS: Three Bean Vegetarian Chili

KQ host Mitch Hightower experimented with a meatless chili recipe featuring three different beans including pinto, black and white beans.  The recipe also included onions, garlic, tomatoes and spices.

KQ partner Chef Philip said, "I like it, but it needs meat".

Mitch said, "I think it tastes okay, but it's very tomato forward and a little too acidic for me".

We'll keep experimenting and we'll keep you posted on the results.

RECIPE EXPERIMENTS: Blue Chip Nachos

Above: Blue Chip Nachos.

RECIPE EXPERIMENTS: Blue Chip Nachos

Chef Philip made nachos for an appetizer, and to change things up he piled the toppings on blue corn tortilla chips. Chef Philip also prefers to mix the toppings together, so things don't fall off of the chips. The topping for these beauties included a base of refried black beans mixed with diced onion, diced jalapeno and grated jack cheese. The nachos were also topped with a dollop of sour cream, (not shown). The entire plate was gobbled up in no time, which is an indicator they were mighty yummy!

EASY APPETIZER: Black Bean Nachos
by Chef Mitch

This very easy to make appetizer is a great party treat or TV night snack.  With only six ingredients, (if you include sour cream topping); and a bake time of 20 minutes, it won't be too long before these are ready to serve.

Check out the recipe and photo tutorial here:

Hot Chili on a Cool Rainy Day
by Chef Mitch

The rainy weather continues here in San Francisco, and this type of weather always puts me in the mood to be in the kitchen.  So Chef Philip and I made our version of Three Bean Chili.  You can find the recipe and detailed photo tutorial here: http://www.kitchenqueers.com/food/threebeanchili/
